Deep and complex. Sweet, floral, caramel in aroma, with dark cacao and red stone fruit notes in cup. High medium frutal acidity. Deep mouthfeel. Jazmin and caramel notes in particular linger in the sweet-toned trajectory of a long finish.

    Located close to the Galeras Volcano (12000 m, still active!), South-West of Colombia, the soil is mainly volcanic, providing nutrients to the coffee and giving it its unique signature. El Aguacate farm is only 3 hectares and its location near the equatorial line provides the perfect sun exposure for these extremely steep hills.

Leur ferme de 3 ha est située nonloin du volcan Galeras, toujours actif d’ailleurs ! Dans le sudouestde la Colombie, les sols sont principalement volcaniques,particulièrement intéressants pour la culture du café. La fermeétant proche de la ligne équatoriale, elle bénéficie d’unensoleillement ideal, sur des cotaux très escarpés.

    Don Herman now is in charge of the farm after the passing of Don Arnulfo en 2020. He went back to work with his dad after retiring from the police 10 years ago. The Botina family has owned the farm for 55 years and has been around coffee for the last 35 years.

    Les grains sont lavés, mis à fermenté pendant 18 heures après avoir été dépulpés puis ils sont mis à sécher au soleil de 8 à 12 jours.

  • Variété Colombia

    Developed by Colombian researchers at Cenicafe by crossing Caturra and Timor Hybrid

    Released in 1982, it was designed to combat the anticipated outbreak of the leaf rust fungus in Colombia. It’s development is credited with saving the Colombian coffee industry from serious damage when the fungus eventually reached Colombia in the mid-80’s.

    A variety obtained by crossing Caturra and the Timor Hybrid, obtained by Cenicafe. It is highly productive and resistant to coffee rust. First released in 1982. Unlike Catimor, this variety is a compound variety, a result of many progenies.
